Pepper Steak

Ingredients:

1 pound shoulder steak
1 Tablespoon Paprika
2 Tablespoons Marg
2 Cloves Garlic diced
1 1/2 Cups Beef Broth
1 Cup Sliced Scallions
2 Green Peppers(strips)
2 Tablespoons Cornstarch
1/4 Cup Water
1/4 Soya Sauce
2 Tomatoes (cut into 8ths)

Method:

Pound the steak until thin and soft. Sprinkle the meat with paprika and allow to stand while preparing other ingredients.

In a 10inch skillet, brown the meat with the marg, add garlic and broth. Cover and simmer for 30 minutes.Stir in scallions and green peppers and cook for another 15 minutes.

In a bowl blend the cornstarch,water and soya sauce.Pour into meat mixture,stirring constantly until clear and thick. Add tomatoes and stir slowly.

Serve over a bed of rice

Knaidelach

Ingredients:

4 Eggs, slightly beaten
4 Tablespoons oil
4 Tablespoons ice cold water
1 cup matzoh meal
1 teaspoon salt
1/2 teaspoons pepper
8 cups water
1 teaspoon salt

Method:

In a large bowl mix eggs, oil and cold water. Add matzoh meal, salt, pepper and mix well. Refrigerate for 1 hour.
Bring water and salt to boil into a 4-quart pot. Lower the flame
Wet the palms of your hand and form mixture into balls. Drop into simmering water. Cover the pot and allow to cook for 30 minutes. Be sure to keep the cover on the pot during the entire cooking time and also for 10 minutes after while the pot cools

Pita Bread

Ingredients:

1/2 Cups Warm Water
2 Packages Dry Yeast
1/4 Teaspoon Sugar
6 Cups Flour
3 Tablespoons olive oil
2 Teaspoons salt
2 Cups Apple Juice

Method:

Combine 1/2 warm water with yeast and sugar. Stir until yeast dissolves and begins to foam. Let stand for 5 minutes.
Sift flour into a large mixing bowl and add oil,salt and the apple juice and stir. Add yeast mixture and mix thoroughly.
Turn dough onto floured board and knead for about 12 minutes until the dough is smooth and not sticky. Oil a bowl and place dough inside it in order to rise, turn to coat with oil.
Cover and let rise in a warm location until dough doubles in size, just over 2 hours. Punch and knead for 3 minutes. Roll and stretch dough into a thick tube shape about 15 inches long and 3 inches wide.
Cut roll into 14 equal pieces. Shape each piece into a ball. Pat each ball into a circle. Place circles on baking sheets and let stand about 1 hour to rise.
Preheat over to 500(260C)
Place baking sheets on lower shelf of oven. Bake for 4-5 minutes until slightly brown. Don't over bake

This is a mezonos recipe so if you want to make them into hamotzi substitue 2 cups of warm water for the 2 cups of apple juice.

Spinach and Feta salad

Ingredients:

1 bunch spinach
250g feta cheese
1/2 punnet button mushrooms
1 1/2 Tablespoons olve oil
1 teaspoon salt
nutmeg

Method:

Remove stalks from spinach and tear leaves into bite-sized pieces. Place in a bowl and add remaining ingredients. Toss lightly until the leaves are well coevered with oil.

Lemon and Herb Portuguese Chicken

Ingredients:

1 packet chicken pieces
2 teaspoons chicken spice
2 teaspoons herb blend for chicken
1 1/3 teaspoon Portuguese chicken seasoning
1/2 teaspoon garlic and herb seasoning
2 teaspoons Telma clear chicken flavour soup(powder of any chicken soup)
Juice of half a lemon
oil equal in quantity as lemon juice

Method:

Mix chicken spice,herb blend,seasonings and chicken soup to a thick paste with boiling water. Add juice of half a lemon and oil of equal amount to lemo juice.Blend and spoon over chicken. Grill or bake.

Lemon Loaf

Batter:

80 ml butter or margarine, at room temperature

250 ml castor sugar
2 eggs
450 ml self-raising flour
salt
125 ml milk
grated rind of one lemon

Syrup:

juice of 2 lemons

125 ml castor sugar

Method:

Beat the butter, castor sugar, and eggs. Add the flour, salt, milk and rind. Put the mixture into a loaf tin and bake at 180 degrees for 45-60 minutes.

Syrup:
mix the castor sugar and lemon juice together. When the loaf comes out, prick it with a fork and pour the syrup over.

Japanese Steak Salad

Salad:

Sushi rice
4 chicken shnitzels
2 carrots cut into julienne strips
1 English cucumber, cut into strips
2 avocado pears cubed
1/4 cup black sesame seeds toasted
1/4 cup white sesame seeds toasted
2/3 cup chopped spring onion

Steak Marinade:

1/2 cup oil
1/4 cup soya sauce
1/2 cup brown sugar
4 garlic cloves, chopped
4 tablespoons fresh lemon juice

Dressing:

1 cup oil
1/3 cup soya sauce
1/2 cup brown sugar
1/4 cup fresh lime juice
1 teaspoon wasabi powder

Method:

Wash and dry steak. Add all ingredients for marinade in processor. Process and place steak into marinade. Leave in fridge overnight. Place all dressing ingredients into processor and process. Refrigerate till needed.
Heat heavy cast iron pan. Char-grill steak till cooked according to your desire. Slice steak diagonally into strips.
Cover with foil to keep warm. Place thin layer of slice on serving platter. Top with salad and drizzle dressing over it.

Sushi Rice Salad

Ingredients:

3 Cups sushi rice, cooked according to packet instructions
1/2 English cucumber, finely diced
1 tablespoon pickled ginger (optional)
1/2 yellow pepper, finely diced

Process the following in a blender:

handful of fresh mint leaves
handful of fresh coriander
handful fresh flat leaf parsley
good shake of crushed chilli flakes
1 small clove garlic, crushed
1 tablespoon soya sauce
2 tablespoons fresh lime juice

1/2 cup horseradish sauce
1/2 cup of mayonnaise

Method:

Add chopped vegetables to rice, Make dressing. Put on dressing just before serving. Add salt according to taste. You can use wasabi instead of horseradish sauce.

Pizza 101

Base:

2 cups flour
1 Tablespoon baking powder
3/4 teaspoon salt
2 Tablespoons oil
1 cup milk

Topping:

1 tin tomato and onion mix(or you can dice them yourself)
garlic flakes
originum
cheddar or mozzarella cheese

Method:

Place the dough on a greased pizza dish. Add tin of tomato and onion mix. Spice with salt, garlic flakes and origanum. Top with grated cheese and topping of your choice such as tomato,mushrooms,olives,pineapple etc..
Bake at 180C for 20 minutes.

Chocolate Brownies

Ingredients:

2 cups sugar
4 eggs
1 cup cocoa
1 cup margarine
1 teaspoon vanilla extract/essence
1 cup flour
250g chocolate chips

Method:

Cream sugar and eggs. Add cocoa and margarine. Add vanilla and flour. When smooth, fold in chocolate chips and place mixture into a large, sprayed tinfoil dish. Cook for 40 mins at 180C. Slice into squares while hot and seperate when cool.
