Ingredients:
1/2 Cups Warm Water
2 Packages Dry Yeast
1/4 Teaspoon Sugar
6 Cups Flour
3 Tablespoons olive oil
2 Teaspoons salt
2 Cups Apple Juice
Method:
Combine 1/2 warm water with yeast and sugar. Stir until yeast dissolves and begins to foam. Let stand for 5 minutes.
Sift flour into a large mixing bowl and add oil,salt and the apple juice and stir. Add yeast mixture and mix thoroughly.
Turn dough onto floured board and knead for about 12 minutes until the dough is smooth and not sticky. Oil a bowl and place dough inside it in order to rise, turn to coat with oil.
Cover and let rise in a warm location until dough doubles in size, just over 2 hours. Punch and knead for 3 minutes. Roll and stretch dough into a thick tube shape about 15 inches long and 3 inches wide.
Cut roll into 14 equal pieces. Shape each piece into a ball. Pat each ball into a circle. Place circles on baking sheets and let stand about 1 hour to rise.
Preheat over to 500(260C)
Place baking sheets on lower shelf of oven. Bake for 4-5 minutes until slightly brown. Don't over bake
This is a mezonos recipe so if you want to make them into hamotzi substitue 2 cups of warm water for the 2 cups of apple juice.
